Hogs Heaven Chocolate Caramel Pork Rind Cookie Bars

Ingredients

  • 2⅓ cup flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 cup brown sugar, firmly packed

  • ½ cup granulated sugar

  • 1 cup (2 sticks) butter, softened

  • 1 teaspoon vanilla extract

  • 2 eggs

  • 1 10-ounce bag caramel baking chips, divided

  • 1 10-ounce bag semi-sweet chocolate baking chips divided

  • 2 cups Hogs Heaven salted caramel brownie pork rinds

Directions

  1. Preheat oven to 350 degrees. Line a 9-by-13-inch baking dish with parchment paper, leaving a 2-inch overhang on two sides. Spray parchment paper with cooking spray and set aside.

  2. In a large bowl, combine flour, salt and baking soda and set aside.

  3. Using a stand or hand mixer, combine brown sugar, granulated sugar, softened butter and vanilla extract and mix until creamy. Add eggs and mix until combined. Slowly add dry ingredients and mix until combined. Stir in half the caramel chips and chocolate chips.

  4. Add dough to prepared pan. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.  Remove from oven and allow to cool completely.

  5. Add remaining caramel and chocolate chips to a small bowl. Melt in microwave in 20 second increments, stirring in between. Repeat until fully melted and smooth.

  6. Cut cookie bars and then drizzle melted chips on the top of each bar. Lightly crush salted caramel brownie pork rinds and sprinkle them on top of cookie bars. Serve immediately.
